Kyoto

Founded in 1926, we sell Ujita Tea, a Japanese tea shop located in Ujitawara Town, Kyoto, one of Japan's leading tea producing areas. We sell over 30 types of tea, including matcha, green tea, roasted green tea, and brown rice tea.

Nara

Matcha from Yamato Tea Farm, located in the naturally rich village of Yamazoe in Nara Prefecture, where artisans are responsible for the entire process from tea production to tea processing.

Fukuoka

Yame tea from Yame City, Fukuoka Prefecture. It is especially known as a famous producer of gyokuro tea. It is characterized by its high-quality flavor, mellowness, deep green color, and elegant fragrance.

Gyokuro

Gyokuro is a high-quality Japanese tea with the most delicate and refined flavor.
The entire tea plantation is covered for about 20 days before picking to block out sunlight and reduce bitterness, bringing out the umami and sweetness.

Slow extraction results in a smooth, rich mouthfeel and a rich aroma.
Each brew leaves a deep, lingering aftertaste, making this a cup perfect for a special occasion.

We select carefully selected matcha from Yamato, Uji, and Yame, which connect the history and culture of Nara.

Matcha

WAKA's matcha is made deep in the mountains of Nara.
This green tea powder is made by steaming tea leaves grown in shade to concentrate their flavor, finishing them into tencha, and then grinding them extremely finely in a stone mill.

It is characterized by the vibrant green color, rich flavor, and delicate yet deep aroma that are unique to matcha. We also handle matcha from all over Japan through our own unique filters.

Genmaicha, a blend of fragrant and gentle flavors

Brown rice tea

Genmaicha is a tea made by combining roasted brown rice with Japanese green tea.
Domestically produced non-glutinous rice and glutinous rice are roasted until golden brown, bringing out a plump, fragrant flavor.
On the other hand, the tea leaves used are sencha and bancha, which are carefully blended to harmonize the refreshing flavor of the tea leaves with the aroma of brown rice.

Brown rice has excess moisture removed by roasting, and the aroma and color change subtly depending on how it is roasted. After that, it is mixed evenly with the tea leaves to create a flavor that is both fragrant and mellow.

Hojicha

This is WAKA's original roasted green tea, made using tea leaves grown in our own tea plantation in Yamato, Nara Prefecture, and roasted while carefully assessing the condition of each leaf.

The tea leaves are selected from Sencha and Kukicha, and the artisans carefully adjust the heat based on the aroma and sound that rises from the moment they are placed in the roaster.
By roasting at a high temperature of around 200°C, impurities are suppressed and a fragrant, clear aroma and mellow flavor are brought out.
After roasting, the beans are cooled immediately and sorted to lock in the aroma. With a clear amber color and a gentle aftertaste, you can sense the deep aroma nurtured by the soil and air of Yamato.

Sencha

This is WAKA's original sencha, which is made in-house from picking to processing.
The tea plants are carefully tended throughout the year, and the new shoots that sprout in early spring are picked when they have one stem and two leaves.
Immediately after picking, the tea leaves are steamed to prevent oxidation and lock in the vibrant green color and aroma.Then, the leaves are slowly rolled in a rolling machine to distribute the umami components evenly throughout the tea leaves.

During the roasting process, the tea is carefully roasted using a unique heat level suited to the Yamato climate, carefully determining the balance between aroma and flavor. The resulting sencha has a harmonious taste of clean astringency and a soft sweetness that spreads throughout the mouth. This tea embodies the climate of Yamato and the artisan's skill, and you can feel the time it took to "make" it in every cup.

Japanese black tea

The new leaves covered in morning dew are gently picked and then allowed to wither slowly, allowing the moisture to be removed by natural wind. After this, the leaves are rolled and oxidized to ferment, resulting in the gentle aroma and sweetness that is unique to black tea.

After fermentation, the coffee is slowly dried at low temperatures to reduce the bitterness and create a smooth, mellow taste with a subtle floral aroma.
